I’m Not Yolking Around…

I was playing around in the kitchen yesterday with a new dessert recipe, meanwhile, the recipe involved the use of three large egg whites. Because I don’t ever like to waste food, as much as possible, rather than tossing the yolks, I decided to do a quick lunch makeover…

Ingredients:
-Egg yolks
-Mini wheat bagel
-Organic salad mix
-Extra virgin olive oil (I used my favourite Jalapeño flavoured olive oil from a local vendor in town)
-Balsamic vinegar
-Salt, pepper and paprika for seasoning
-Finely chopped fresh garlic
-Shredded cheese

Directions:
*In a small non-stick frying pan , I fried the yolks in my favourite olive oil; seasoned it with salt, pepper and pinch of paprika and bits of chopped garlic.
*On the other end of the pan I placed the mini bagel alongside the yolks and topped it with shredded cheese. The bagel also soaked in the remainder of the olive oil, which made for a nice flavouring on the bread.
*When the yolks were cooked, I placed them on top of one side of the bagel.
*Remove it from the pan and place the salad mix on top of the yolks, drizzle with some balsamic vinegar, olive oil.
*On the other half of the bagel I placed two slices of tomatoes and also drizzled that with a bit of balsamic vinegar and olive oil.
