We all have our favorite rotisserie chicken, and it’s often enjoyed in many different tasty ways. This quick, five-ingredient salad is healthy, simple, and delicious—perfect for a satisfying meal!
Ingredients:
- 2 oz Organic Spring Mix, washed and rinsed
- 4 oz Rotisserie chicken
- 1 tbsp Basil Pesto, plus 1/2 tsp extra
- 6 cherry tomatoes, quartered
- Freshly crackled black pepper
Recipe Preparation:
- Place spring mix in a salad bowl.
- In a Ziploc bag, place the rotisserie chicken and basil pesto, then shake until combined.
- Place on top of the organic spring mix, then add 1/2 tsp basil pesto and top with tomatoes. Season with freshly cracked black pepper.
- Chill salad in the fridge for about 10 minutes. before serving. Enjoy!
