Bacon, Figs, and Rum Crostini

For our first delivery I chose all fruits (as pictured above), and the one fruit that excited me most are the figs.  Believe it or not, I never had them so fresh until now!  I have a new-found love for figs, especially knowing that, as delicious as they are as is, I can do so much more.  Whilst on the subject of figs, what I have for you today are party-in-your-mouth gems.  You will find that a robust cup of coffee or tea is just what you will want alongside these delightful, bite-size, sweet & savory snacks.

Ingredients

  • 2 to 4 regular smoked bacon slices (2 1/4 to 3 1/2 ounces uncooked)
  • 1lb (equivalent to approximately 12) small fresh ripe figs, halved lengthwise
  • About 1 tablespoon balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp rum
  • 1/3 cup brown sugar
  • 1/3 cup (about 1 1/2 ounces) crumbled mild goat cheese
  • 6 pieces of sliced sourdough bread, cut in halves (for a total of 12)

Directions

  1. Preheat the oven to broil (500° F).
  2. Arrange the figs on a small baking sheet (I used a 7×9 brownie pan), cut sides up. Brush the cut surfaces with balsamic vinegar, rum, and sprinkle heavily with brown sugar.  Set aside.
  3. On a regular baking sheet, arrange the sourdough bread to fill the entire pan.  Drizzle the olive oil generously on each slice, then top with a small crumble of goat cheese, a slice of bacon, and slice fig.  Bake until the brown sugar are bubbling atop the figs, about 8 minutes or until the edges of the bread looks crusty and golden brown.  The goat cheese will not melt.  Drizzle a bit more olive oil on top of each slice and serve immediately.
  4. Meanwhile, broil the remaining figs in the oven for approximately 2-3 minutes.  Serve them as extras alongside the crostini, or enjoy as is.
