Oven-fried Chicken and Salsa Fresca Salad

Okay folks, the ‘oven-fried’ concept may be an oxymoron recipe, but it sure beats oil splashing all over my white kitchen and stainless steel stove!  Besides, it’s fast, easy and pretty darn delicious.  Although it is a recipe inspired from Food Network’s Diners, Drive-ins and Dives I didn’t mimic anything but the directions.  Everything else was semi-homemade with the exception of one ingredient.

Ingredients:

For the chicken…

Directions:

  1. Follow the instructions on the package of Mama Sita’s Barbecue Mix/ or from the mix/or rub of your choice.  Marinating the chicken overnight is ideal.
  2. Place all ingredients into a resealable container and mix until thoroughly combined.
  3. If marinating overnight, place in a bowl, cover with plastic wrap and place into the refrigerator overnight so that the meat can absorb some of the liquid.
  4. Remove the chicken from the refrigerator and dredge in self-rising flour.
  5. Preheat oven to 350 degrees F.
  6. Fry the chicken in a 1/2-inch of canola oil in the bottom of a roasting pan in the preheated oven. Fry the chicken for 15 minutes per side

For the Salsa Fresca salad…

Mix all the ingredients in a large bowl; season with salt and fresh ground pepper.  Enjoy!–gcc
