I’ve been given an opportunity to test run a recipe that will be included in an app for iPad–they may even include my pictures (if selected) to be featured along with the recipe. Meanwhile, when I read the recipe in its entirety, I was excited to see that part of the recipe called for spatchcock chicken. The recipe stated that spatchcock chicken is a process that you can ask a butcher to do, but, I thought, what an opportunity to challenge myself, not only in test running the recipe, but achieving one of many techniques I have been wanting to try for quite some time now.
Good Afternoon! Last night I ended the evening with ‘50 Shades of Chicken‘, a cookbook parody on my Instagram portfolio… Although this recipe is adapted from a different cookbook: Memories of Philippine Kitchens, this morning I start the day early with my own ‘first shade’ parody of Chicken: RED. Hence, I bring to you a popular dish from the city of Bacolod, Philippines, ‘Chicken Inasal’. This dish uses different ingredients for its marinade and basting sauce that create a unique flavour. Cooking it calls for a constant basting of lemon butter sauce with annatto (a natural plant extract used as dye) which gives it a unique hue of red in colour.
I want to emphasize that my style of cooking is ‘free range‘…meaning, I try to make it my own unique style, but with the guidance of a recipe. So on this note, I found a wonderful chicken recipe from bon appetit magazine with an emphasis on heirloom tomatoes–which I happen to just purchase a few days ago from our local farmers market. I wanted to use them for something special, so I made a roasted chicken, using these beautiful heirloom tomatoes, a certified organic whole chicken, a variety of herbs and spices for my dish. Below, I am going to give you the basis of the recipe and ingredients, and give you the option for making my version (as pictured) of the same recipe.
