Tomato with Anchovy Salad

I have to admit that this is probably one of the best salads I’ve made thus far. If you’re a fan of both tomatoes and anchovies you’ll have to give this one a try!

Ingredients (for *Dijon vinaigrette dressing):

-2 tbsp Grey Poupon Dijon Mustard
-1 tbsp Organic Red Wine Vinegar
-1 tsp Extra Virgin Olive Oil
-Salt and Pepper to taste
NOTE: Measurements are approximate depending on how much you need.

Directions:

Mix ingredients together and set aside.

Ingredients (for salad):

-1 small basket organic, grape tomatoes (or similar) cut in halves.
-1 clove finely chopped, fresh garlic
-1/4 size of sliced red onion
-1 box (2 oz) fillet of anchovies
-1 small head chopped artisan lettuce (or similar)
-*1 tbsp Dijon Vinaigrette Dressing
-Fresh ground black pepper to season

Directions:

1. In a large salad bowl combine/toss the grape tomatoes with the chopped garlic.
2. Next, add-in the chopped lettuce, red onion, Dijon vinaigrette, and anchovies.
3. Drizzle in some of the olive oil from the anchovies onto the mix greens.
4. Season with fresh, ground black pepper.

TIP: Below are some other ingredients you can add-in to make this ‘salad’ into a meal!…
-Shaved Parmesan
-Hand-torn croutons (see my recipe)
-Cubed-slices of left-over meat, i.e., grilled steak or chicken
