Well today hubby and I ate in for lunch. I was in such a cooking mood since last night. For lunch I made pork chops & eggs, a real easy, delicious recipe that I will share soon. The best part however, was made last night and served for lunch today…A surprise dessert for hubby.
We had quite a few pomegranates left from our orchard, and I knew my husband loves his sorbet, so today I made this refreshing dessert as a surprise for him…
Ingredients:
-1⁄2 cup sugar
-1 cup water
-4 cups (about 12 medium-size pomegranates) fresh pomegranate juice, seed strained and tossed (you can use a regular squeezer, preferably with a catcher to hold the juice)
– 1 tbsp fresh lemon
-Seeds of 1/2 a pomegranate, for garnish
Directions:
1. Place sugar, 1 cup water, 1 tbsp lemon, and fresh pomegranate juice in a large saucepan. Bring to a boil over low heat, stirring constantly. Remove from heat and cool to room temperature. Refrigerate until well chilled (about 2 hours). Process in an ice cream maker according to manufacturer’s instructions. Serve garnished with pomegranate seeds.
