My husband and I celebrated our 12th year wedding anniversary this weekend with my immediate and extended family. And, as with any occasion, all good things come to a halt, at least until the next gathering.
Meanwhile, before they left to head home, I made my mom and older son something fresh to help start off their day. This is what I came up with…
If you LOVE fresh avocado as much as I do, here’s my refreshing breakfast (or any time) snack kicker.
Serves 4
Ingredients:
-Two whole avocados, cut in half, remove seed
-Two soft (or hard-boiled eggs), sliced in half
-1/4 slice of tomato, diced
-1/4 slice of onion, chopped
-Shredded cheese, pinch (I used an Italian cheese blend)
-Lime slices
-Salt, pepper, pinch
Direction:
While preparing your chopped tomatoes and onions, in a separate pan, boil two (or more eggs, if you want to make some extras for later) for about 2 minutes for soft boil, 4 minutes for medium boil and 6 minutes for hard boil. Set aside to cool down the egg shells.
Once the egg shells have cooled down, cut the avocado in half, remove the seed and sprinkle the slices with lime to prevent them from browning. Add an egg slice on top of each avocado half, top with onions, tomatoes, shredded cheese, salt, pepper and a lime slice. Voilà! this little number is not only eye candy in presentation, but this idea is equal parts simple and intriguing. Happy clean eating!–gcc
